Vinchio Vaglio I Tre Vescovi Barbera D’Asti Sueriore DOCG 2021 – Country: Italy – Capacity: 0.75 Vinchio Vaglio This is one of the flagship wines of the beautiful Piedmontese winery. For about 20 years it has been the tangible result of how, thanks to a unique terroir and the experience of talented local winegrowers, it is possible to create a high-quality Barbera that is easy and good to drink, but above all affordable. The unique name refers to an extraordinary Barbera “cru”, the Tre Vescovi, which is located where the dioceses of Acqui Terme, Alessandria and Asti meet. For processing, the grapes are harvested by hand when perfectly ripe. This is around the third decade of September. The vineyards, which are about 30 years old, produce very high quality, rich and concentrated bunches. The transformation takes place in steel, in thermo-conditioned tanks. Then, immediately after malolactic fermentation, the wine is matured in 75-hectolitre French oak casks and partly in barriques. This phase lasts for about 12 months, after which the wine is once again put into steel tanks before being bottled for a further six months of refinement before being finally put on the market. A wine of great pleasantness and typicality, this Barbera was born to accompany with satisfaction many of the typical dishes of the region. Starting from the classic tagliatelle with mushrooms, to ravioli “plin” with meat sauce. Perfect with main courses of red meat, such as braised and roasted meats, it is also a perfect accompaniment to game.
