Terra Costantino Etna Rosso “De Aetna” DOC 2022 – Country: Italy – Capacity: 0.75 Terra Costantino Let’s start with a curiosity. The name deAetna is inspired by the title of an ancient Latin pamphlet and expresses the sacredness of the oenological universe. Written in the form of a dialogue, the text tells of the Venetian writer Pietro Bembo’s ascent to the summit of the volcano on his return from his stay in Messina with Costantino Lascaris. Etna Rosso DOC, this interesting wine by Cantina TerraCostantino is made from a classic Etnean blend of 90% Nerello Mascalese and 10% Nerello Cappuccio. Native to the volcano, these grapes are capable of producing pleasantly elegant and fruity wines, reminiscent of the noblest Pinot Noir from Burgundy. After harvesting, the grapes are destemmed and undergo fermentation with maceration for about ten days. After malolactic fermentation, the wine is aged in steel and oak tonneaux before being bottled and left to rest for some time in the cellar. The result is a red wine that is both elegant and intense. Pleasantly mineral, it is a perfect wine both as an aperitif and in combination with delicate dishes. Excellent, for example, with vegetable pies or main courses of meat, preferably white.
