A long process of preparation that has allowed it to reach a remarkable level of excellence. Le Marche is an area of rare beauty, characterised by rolling hills and breathtaking views. Specifically, the vineyards of Tenuta Cocci Grifoni are located at an altitude between 230 and 250 metres above sea level, with an optimal south-west exposure that guarantees perfect ripening of the grapes. The clay soil of this area also contributes to giving the wines a solid structure and unique aromatic complexity. Montepulciano in purity, this noble native vine expresses its best characteristics here. Known for its ability to produce intense and structured wines, Montepulciano gives life to a wine of great depth and remarkable ageing capacity. Harvested by hand, with rigorous selection of the bunches in the second ten days of October, vinification begins with maceration of the black grapes at a controlled temperature. Post-fermentation maceration then contributes to enriching the wine’s aromatic profile. Finally, for the delicate maturation phase, the Grifone is placed in 30-hectolitre Slavonian oak casks for approximately 24 months. Finally, after bottling, the wine rests in the cellar for at least a further 6 months before being put on the market. On the nose, soft, juicy notes of plums in syrup emerge, followed by darker tones of black tea and scents of violets. In the mouth, the wine opens with balsamic sensations. A taut structure and beautiful depth invite the next sip. A wine of great structure, it offers a long, enveloping finish. Ideal with red meats, game and mature cheeses, it can accompany savoury dishes such as pappardelle with wild boar ragout or baked lasagne.
