Suavia “Massifitti” Bianco Veronese IGT 2021 – Country: Italy – Capacity: 0.75 Suavia Dedicated to the rediscovery of Trebbiano di Soave, an ancient indigenous variety with deep roots in the Veronese winemaking tradition, Massifitti is the result of an ambitious project. Specifically, the grapes used by Suavia for the production of this white wine come from the Massifitti vineyard, which extends over about 2 hectares, on a hill about 300 metres above sea level. The name Massifitti derives from the particular composition of the soil, characterised by large, compact basaltic rocks that give the soil a unique mineral richness. This volcanic terroir contributes decisively to the wine’s personality, giving it a vibrant freshness and unique complexity. The Trebbiano clones used for the vineyard, planted in 2006, come from old vines selected to preserve the authentic characteristics of this variety. Over the years, Suavia has extended the vineyard area dedicated to Trebbiano di Soave to 6 hectares. Careful vinification takes place through spontaneous alcoholic fermentation, initiated by the indigenous yeasts naturally present on the grape skins. This preserves the freshness and aromas of Trebbiano di Soave, enhancing its authenticity. The wine then matures for 15 months in contact with the fine lees, again in steel, before undergoing a light filtration and bottling. This is followed by a further 12 months resting in the cellar before release. Brilliant straw yellow in colour, the nose reveals a bouquet of citrus fruits and sweet spices. In the mouth it is clean and vertical, well supported by lively acidity and an elegant, creamy structure. The finish is long and savoury. Accompanies hors d’oeuvres and first courses based on vegetables and fish. Excellent with oysters and raw seafood.
