Pasetti Vini A pure Passerina, this Terre Aquilane IGP Testarossa from cantina Pasetti is the young version of the historic Testarossa line. A wine that finds its highest expression in the Capodacqua (AQ) area. A white of great freshness that ranges from herbaceous to mineral, with finesse and elegance. But let us proceed with order. The Passerina grapes used for the production of this wine come from vineyards located in the municipality of Capestrano, within the Gran Sasso and Monti della Laga National Park, an area characterised by high temperature excursions, perfect for preserving acidity and aromas. Passerina, it is worth remembering, is an indigenous Abruzzi grape variety that by its very nature already stands out for its marked acidity and slow sugar accumulation capacity. Its ripening, in fact, is medium-late, and this makes it possible to obtain fresh and aromatic wines. In the glass, this Passerina has a brilliant greenish yellow colour. The nose reveals an intense bouquet of floral aromas of broom and fruity aromas of green apple. In the mouth, however, it is fresh and mineral, with a pleasant vivacity that gives the wine a marked freshness. Good sapidity and marked minerality. The finish is herbaceous and elegant. Perfect to accompany seafood cuisine, it is ideally paired with hors d’oeuvres, raw fish, shellfish and crustaceans, and baked fish.
