Sartori di Verona Recioto di Soave DOCG “Vernus” 2021 – Country: Italy – Capacity: 0.50 Sartori di Verona For lovers of sweet and elegant wines, this Vernus is an irresistible temptation. Recioto di Soave DOCG, born from a blend of the two typical grapes of the area: 90% Garganega and 10% Trebbiano di Soave. The vineyards are located in the hilly area north-east of Verona, composed of calcareous and alluvial soils. Here the grapes reach full ripeness and are harvested by hand and then sent to special drying lofts where they remain until January or February. Soft pressing and a light maceration of the skins are the preliminary operations that allow the must to begin its slow fermentation at a controlled temperature. Initially this takes place in steel tanks, and is then completed in small oak barrels. Finally, refinement continues in wood for about another 12 months, in contact with its own yeasts and with periodic “batonage” operations. In the glass, the wine has a beautiful golden yellow colour. The nose reveals a complex bouquet of honey, vanilla and dried fruit. In the mouth it is pleasantly smooth and appropriately sweet, with a bitterish aftertaste that brings to mind almonds. It is the perfect companion at the end of every meal. Excellent with simple traditional desserts, it should be tried with a slice of apple pie.
