San Salvatore 1988 “Pino di Stio” IGP Paestum Rosso 2020 – Country: Italy – Capacity: 0.75 San Salvatore 1988 In Stio, among the woods and mountains of the Cilento National Park, in an area where the characteristic red pines grow, there is a small vineyard. A handkerchief of land that gives fine grapes from which an elegant and fragrant red wine is made. A unique wine that Azienda Agricola San Salvatore 1988 offers here. A pure Pinot Noir, this interesting wine is the result of classic red vinification, with repeated pumping over and punching down at a controlled temperature to extract the maximum possible colour. This is followed by ageing in second and third passage used barriques for about a year. Then, after bottling, the maturation process continues for about another year and a half in the bottle. Typical of its colour, light ruby red, this wine presents an extremely interesting bouquet, with ethereal notes and scents of small red fruits, including currants, and further fruity notes of cherries, strawberries, raspberries, blackberries and blueberries. Memories of violet, mint, vanilla and even cinnamon complete the picture. In the mouth it is fresh, enveloping and elegant. A harmonious and refined wine that honours the noble grape variety from which it comes.
