Roberto Crosio Canavese DOC Rosso 2022 – Country: Italy – Capacity: 0.75 Roberto Crosio Canavese DOC Rosso, Cantine Crosio offers this interesting local wine that originates in the heart of Piedmont, in the picturesque area of Candia Canavese, in the province of Turin. A particular blend, composed of 75% Barbera and 25% Merlot. Barbera, an indigenous Piedmontese grape, gives the wine marked acidity, freshness and intense fruity aromas. The Merlot, on the other hand, adds softness and roundness, perfectly balancing the structure of the wine. The result is a well-balanced wine with great drinkability. Fermentation of at least 7 days on the skins activated with the use of selected yeasts, this slow process allows the best possible extraction of the aromatic compounds and tannins from the skins. This is followed by a soft pressing, to avoid excessive extraction of hard tannins, and a short refinement in steel for 3-4 months. Finally, bottling takes place at the end of spring, followed by further resting in the cellar for at least 2 months, before marketing. Cantine Crosio’s Canavese DOC Rosso is bright ruby red in the glass. On the nose, it offers vinous aromas that immediately recall cherries in all their forms, from fresh fruit to jam. On the palate, the wine proves to be fresh and pleasant, with a lively acidity that immediately invites one to take another sip. It pairs beautifully with a wide range of dishes, from hors d’oeuvres based on cured meats and cheeses to risottos and first courses dressed with light sauces. It is also perfect with white meats and vegetable dishes. For lovers (many) of traditional Piedmontese cuisine, it can be paired with agnolotti al plin or even with bagna cauda.
