Like this Quintessa Illuminazione, a blend of three varieties, dominated by Sauvignon Blanc Musqué, which alone accounts for 50% of the blend. With him, Sauvignon Blanc (33%) and Semillon (17%). The ‘Musqué’ is a particularly aromatic variant of the classic Sauvignon Blanc that brings intense floral aromas and lively freshness to the wine. The grapes, harvested by hand in the cool morning hours, are immediately brought to the cellar where the whole bunches are gently pressed. Fermentation takes place in a combination of French oak barrels, acacia casks, egg-shaped concrete fermenters and stainless steel containers. Each material gives the wine unique characteristics. In addition, the continuous stirring of the yeasts during the subsequent ageing phase contributes to the wine’s complexity and weight. In the glass it has a brilliant straw yellow colour with golden reflections. The nose is pleasantly floral and citrusy, with notes of yellow apple, melon and citrus blossom. In the mouth, however, it is fresh and vibrant, thanks to the natural acidity. The finish is long and persistent, with a perfect balance between freshness and complexity.
