A wine made to be great immediately and not to be left in the cellar for too long to wait. Vinification is simple but accurate, with an initial spontaneous fermentation and maceration on the skins for about two weeks. The wine is then aged in barriques on the second passage. It takes 12 months to reach the right balance and to move on to the bottling phase and the last refinement, of about 3 months, in the bottle. At that point the wine is ready and can introduced on the market. The result is an intense ruby red glass, with notes of red fruit that are still very fresh and a barely perceptible sensation of vanilla. On the palate it is rich and full-bodied. A wine that knows how to please from the first sip and that proves so versatile that it can also be paired with tasty fish dishes, such as the classic caciucco alla livornese.
