Pio Cesare Barbaresco DOCG 2020 – Country: Italy – Capacity: 0.75 Pio Cesare Born from a careful selection of Nebbiolo grapes from different areas of the Barbaresco area. A label of great complexity and longevity. All the vineyards are family-owned, located in suitable areas on sun-kissed hillsides with a temperate microclimate that gives the fruit the ideal characteristics to create a wine of great structure and refinement. After manual harvesting, the grapes are destemmed and gently crushed. The subsequent fermentation takes place in temperature-controlled stainless steel vats, with maceration on the skins for about 30 days. This is followed by a 30-month maturation phase in French and Slavonian oak barrels, and partly in barriques, which completes the wine’s aromatic profile and makes it soft and velvety. In the glass it has a beautiful intense garnet red colour with orange reflections. The nose opens with a complex and enveloping bouquet, with hints of ripe berries, sweet spices, vanilla, cocoa and liquorice. In the mouth, however, the wine is full and structured, with silky tannins and a lingering, harmonious finish. Its structure and great complexity make this red wine an ideal match for red meat dishes, game, mature cheeses and pasta dishes with meat sauce. A wine of great longevity, it is good today but can be kept in the cellar for over 20 years.
