It is called Sale, IGT Salento, and is the result of processing Fiano and Malvasia Bianca grapes. A fresh and fragrant wine produced by Cantina Menhir. An intriguing wine capable of conquering the palate of simple enthusiasts and demanding experts alike. Fiano and Malvasia come from vineyards that enjoy ideal conditions, with medium-textured clay soils and a warm, Mediterranean climate, mitigated just enough by sea breezes. This gives rise to high quality grapes, rich in aromas and flavours. After the harvest, which is carried out at different times for the two varieties (Fiano at the end of August, Malvasia at the beginning of September), vinification involves cold pre-fermentation maceration and temperature-controlled fermentation in steel. The wine then matures on the fine lees for a few months, completing its evolution process. Straw yellow colour with golden hues. On the nose, Sale is an explosion of fruity aromas of mango, melon and peach. Then hints of white flowers and almond notes. In the mouth, it is fresh and savoury, with a nice structure and a persistent finish. Excellent as an aperitif, it goes well with raw fish starters and fresh cheeses. Try it also with ethnic dishes such as couscous.
