Champagne Barons de Rothschild “Concordia” Brut – Country: Italy – Capacity: 0.75 Barons de Rothschild It is made from the most classic of Champagne blends with 60 % Chardonnay and Pinot Noir for the remainder. We are talking about Barons de Rothschild, Champagne Concordia Brut and ‘sans année’, i.e. not vintage. The grapes, harvested by hand when perfectly ripe, fresh and rich in aromas, are brought to the cellar quickly for processing. Alcoholic fermentation takes place in temperature-controlled stainless steel vats, and is followed by malolactic fermentation, necessary to create the desired complexity in the finished wine. Maturation in contact with its yeasts in the bottle lasts for over three years and, after disgorging, the wine is dosed with approximately 6 grams of sugar per litre. Straw yellow with beautiful brilliant reflections, the breadth and depth of this wine testify to the high proportion and exceptional quality of the reserve wines that went into the blend. The very fine bubbles favour the perception of the more delicate aromas of Champagne. Here, the freshness of the Chardonnay, the aromas of white-fleshed fruit, such as pears and nectarines, and ethereal touches provide a very pleasant first impact. As the minutes pass, then spicy and complex notes emerge, with recognisable aromas of apricots and almonds. In the mouth, on the other hand, one discovers a round and generous bubble, characterised by a beautiful verticality. Notes of nectarine, honey, saffron and pepper are recognisable. The long finish leaves a delicate bitter sensation in the mouth.
