Champagne Ayala Brut Rosé Majeur – Country: Italy – Capacity: 0.75 Ayala Ayala’s Champagne Rosé Major is carefully crafted from half Chardonnay grapes, with 40 percent Pinot Noir and the remainder Meunier. It is, therefore, a classic Champenoise blend, with grapes from different villages scattered throughout the areas of the appellation. Harvesting, as is it should be, is entirely manual. The modern winemaking cellar allows each plot to be processed separately, thus enhancing the unique terroir of each vineyard. Processed by the traditional method, the base wine is inoculated with selected yeasts and rested in the bottle, where frothing takes place and subsequent aging takes place for more than 24 months. Then, after disgorgement and the addition of a low dosage, the Champagne remains in the cellar for at least another 24 months before being put on the market. In the glass, it is a beautiful, delicate pale pink color. On the nose, it beguiles, generous and open, releasing notes of red fruits, such as strawberries and raspberries, and peaches. In the mouth it is super expressive, characterized by a beautiful freshness, due in part to the strong predominance of Chardonnay. The finish is enveloping, with an important persistence of the fruit. Particularly at home at the table, Rosé Majeur accompanies tasty dishes such as a grilled salmon fillet or lamb chops.
