Cavit Müller Thurgau Cuvée Speciale Brut Dolomiti IGT – Country: Italy – Capacity: 0.75 Cavit Müller Thurgau is one of the most popular grape varieties for producers working in cold climates with long, harsh winters. This is because the Müller, when the environment is hostile, is at its best. After all, it was created in 1882 by prof. Hermann Müller, in order to adapt to the cold climate of the canton of Thurgau in Switzerland. Fruit of a love marriage between Rhine Riesling and Madeleine Royal. To produce its Cuvée Speciale Brut, CAVIT harvests it in the Cavedine Valley, on the Brentonico Plateau and in the beautiful Cembra Valley, where the air is fresh and the vineyards enjoy a good temperature range between day and night, which favours the slow ripening of the grapes and the appearance of delicate aromas. The grapes are selected and harvested by hand. Quickly brought to the cellar, they are softly pressed and undergo a short cold maceration in contact with the skins. This is followed by classic white vinification at a controlled temperature and sparkling process in autoclaves to enhance the finesse of the varietal aromas. Very fine perlage that generates a white foam and a persistent crown, it has delicate and aromatic scents. In the mouth it is soft, pleasantly fresh, elegant and with character.
