We are talking about Magnetite, Extra Brut, proposed here by Cave Mont Blanc de Morgex et La Salle. A tribute to the Aosta Valley and its history. The vineyards from which Magnetite originates are located in the picturesque village of Costa del Pino, at an altitude of 1800 metres, in the municipality of Cogne. Here, generations of miners have worked inside tunnels and galleries dug into the rock, a legacy that today also contributes to the wine ageing process. The extreme conditions of altitude and climate, with significant temperature fluctuations between day and night, allow Prié Blanc to develop unique organoleptic characteristics, including a marked freshness and minerality reminiscent of the rocky terrain of the Alps. An indigenous grape variety of the region, it is cultivated in the highest areas of the Aosta Valley. Here the Prié Blanc gives life to fresh, vibrant wines. The first fermentation takes place in stainless steel, preserving the freshness and purity of the fruit. Then, after bottling, the wine is transported to the ancient mines, where it is left to rest for at least 24 months. Here, where darkness, temperature and humidity are constant, the wine matures slowly. The Magnetite is degorged and dosed as Extra Brut, thus maintaining an extremely dry profile that enhances the naturalness of the grapes. Straw yellow colour with greenish highlights, a nuance that evokes freshness and youthfulness. The bubbles are fine and persistent and enhance the wine’s elegance. On the nose, delicate floral notes. In the mouth, it stands out for its mineral freshness, enhanced by a creamy texture that envelops the palate without being intrusive. The finish is long, dry and vibrant, perfect to accompany a wide range of dishes. Excellent as an aperitif, it also goes well with medium-aged cheeses, such as Bleu d’Aoste. Also ideal with fish or shellfish dishes.
