Castello di Spessa Sauvignon DOC Friuli Isonzo 2023 – Country: Italy – Capacity: 0.75 Castello di Spessa There is no grape variety more identifiable than Friuli. Even if its origins are not in our North East but in the Bordeaux region. We are talking about Sauvignon Blanc, a pleasantly aromatic grape variety, capable of giving life to white wines with a clearly distinguishable and therefore identifying olfactory profile. Castello di Spessa, in particular, processes it in purity to give life to this Friuli Isonzo Sauvignon DOC, produced from grapes grown in the vineyards of Cormons. After soft pressing of the grapes, fermentation takes place in temperature-controlled stainless steel tanks. Once the transformation phase is over, the wine continues its maturation in steel tanks, in contact with its noble lees. This slow maturation phase, designed to add complexity to the wine without distorting its fine aromatic framework, generally continues until March. Only then is the wine ready to go into the bottle and, after a few months, reach the shelves and consumers. Straw yellow colour with green reflections. The nose immediately reveals a wine characterised by a fine and elegant bouquet, with hints of apricot, tropical fruit and (the inevitable) tomato leaf. In the mouth, the correspondence is almost perfect. This reveals a pleasantly fresh and rich wine, characterised by a long finish. Excellent with fish of all kinds and risottos with a strong flavour, it is the right wine to accompany the classic Catalan lobster or a nice fish soup.
