Castel de Paolis “Donna Adriana” Bianco Lazio IGP 2021 – Country: Italy – Capacity: 0.75 Castel de Paolis IGT Lazio Bianco, Donna Adriana is one of the good wines offered by the Castel de Paolis winery in Grottaferrata. A product on the ‘card’ since 1993, created from a blend of Viognier grapes in large majority and Malvasia del Lazio. Grapes characterised by a strong personality and a pleasant aromatic charge, due in large part to the soils in which the vines are rooted. Soils of volcanic origin, with good exposure and an ideal microclimate. We are about 250 metres above sea level, with vines that can be over 30 years old. After harvesting, the grapes are taken to the cellar for immediate processing. The mass is divided into two parts. Approximately 85% of the mass is processed in steel tanks, while the remainder takes the barrique route. What results is a beautiful wine characterised by a golden yellow colour, with very intense and persistent fruit notes. Then exotic and white-fleshed fruit. Scents of remarkable finesse that prepare for a sip of absolute elegance. The palate reveals a pleasantly savoury, soft and persistent wine. On the everyday table, this Latium white easily accompanies fish dishes, but also elaborate first courses, white meats, medium mature cheeses and goat’s cheese.
