One, in fact, is hardly enough to get you through the evening. The Passerina grapes in this case come from hillside vineyards in the province of Ascoli Piceno. Clayey soils, with a south-west exposure. Vinified in white, with soft pressing of the grapes and fermentation at a controlled temperature. For the ageing phase, the wine rests for about 3 months in steel tanks and one month in the bottle. Straw yellow, this Passerina from the Marche region has intense and persistent aromas of white flowers and sweet yellow fruit. Elegant and very pleasant, it is a white wine with a pleasantly soft taste, while being well supported by an evident natural acidity. Fresh, balanced and harmonious, it will certainly not make us regret the purchase. At table, it goes well with fish dishes and the classic olive all’ascolana. A true delight.
