Cantine Fina “El Aziz” Bianco Vendemmia Tardiva Terre Siciliane IGP – Country: Italy – Capacity: 0.50 Cantine Fina Pure excellence. El Aziz is a magnificent wine, as evidenced by its name, which – in Arabic – means ‘The Magnificent’. A passito wine, it is produced by Cantine Fina and comes from a careful selection of Grillo grapes dried on the vine. These grapes come from a single vineyard located in western Sicily, at an altitude of approximately 200 metres above sea level. The climate here is Mediterranean, with long, hot, windy summers and mild winters. Harvesting is strictly by hand in the first ten days of October, when the grapes have reached a light withering on the vine. Once in the cellar, the grapes are vinified in steel with a slow and controlled fermentation. The wine then matures for six months in steel and a further six months in the bottle before being ready for tasting. Intense straw yellow colour with clear golden hues, tending towards amber. The nose reveals a complex and enveloping bouquet, with notes of very ripe and dried white fruit. Clear hints of pineapple, peach and apricot, to which are added vanilla, honey and sweet spices. In the mouth it is warm, soft and structured, with a persistent and pleasantly bitter finish. A meditation wine, it accompanies blue cheeses and creamy desserts such as mousses. To be tasted calmly, to fully savour all its nuances and complexity.
