Cantine Colosi “Cariddi” Bianco Terre Siciliane IGP 2023 – Country: Italy – Capacity: 0.75 Cantine Colosi The freshness of Insolia and the minerality of Catarratto. This is the ‘secret’ recipe of this interesting Terre Siciliane IGT proposed by Cantine Colosi. The grapes come from the estate’s vineyards in Sciacca, in the province of Agrigento, and Salemi, in the Trapani area. Here the soils are clayey and guarantee full ripeness to the grapes used for blending. Harvesting takes place in the second ten days of September. After the harvest, the grapes are soon taken to the cellar to be crushed, maintaining fragrance and primary aromas. The must is then fermented in stainless steel tanks at a controlled temperature and, at the end of this phase, the wine is aged for at least three months in stainless steel tanks, followed by a further two months in the bottle. Pale straw yellow in colour with greenish highlights, the nose reveals fresh aromas, with sensations of white flowers and a generous fruity component. In the mouth, however, it reveals a pleasantly balanced wine, between fruit and freshness, and characterised by a long persistence, capable of prolonging the pleasure of drinking for several minutes. Perfect with fish and seafood dishes, this Sicilian white is also excellent as an aperitif.
