Cantina Toblino “Largiller” Nosiola Vigneti delle Dolomiti IGT 2016 – Country: Italy – Capacity: 0.75 Cantina Toblino This organic wine originates in one of the most prized cru of the Valle del Laghi, the ‘Argiller’ area. This area is characterised by soils of fluvial origin with a strong clay component, hence the name of the wine. A terroir capable of giving this white a distinctive character. 100% Nosiola, this is the only indigenous white grape variety in Trentino. A precious and rare grape, capable of best expressing the particularities of its territory of origin. Cultivated in the vineyards surrounding the Valle dei Laghi, Nosiola is a late-ripening vine that benefits from the valley’s mild climate and constant ventilation, elements that preserve its freshness and fragrance. Harvesting takes place at the end of September, with careful manual selection of the grapes. Vinification begins with a soft pressing, followed by a short maceration on the skins to enrich the wine’s aromatic profile. Fermentation then takes place in large oak barrels, where the Largiller matures for over 6 years, acquiring complexity and depth. Only after further ageing in the bottle is the wine finally ready to be enjoyed. Approximately 7 years after the harvest! This long process ensures that Largiller is only produced in the best years, when the grapes express their full potential. A very long wait that is rewarded from the very first taste. In the Largiller glass, it has a deep straw-yellow colour enriched by brilliant golden reflections. The nose is intense and complex, with a bouquet that ranges from fruity notes of grapefruit and green apple. Then delicate floral hints of broom and wild lime, plus a subtle touch of hazelnut on the finish. On the palate it is broad, balanced and round, with a refined structure that ends with a pleasant persistence and a light mineral and woody note that adds depth and finesse. A wine with great ageing potential, it develops new scents with the passage of time, offering ever-changing emotions.
