Cantina Sociale di Trento “Zell” TrentoDoc Brut Rosé – Country: Italy – Capacity: 0.75 Cantina Sociale di Trento As August draws to a close, it is time to harvest the grapes in the Zell vineyards to produce this interesting Metodo Classico Brut Rosé. Pinot Noir grapes are carefully selected and harvested by hand in small crates. After a brief maceration on the skins at a low temperature, to extract the characteristic colour, the grapes undergo soft pressing to obtain the free-run must used to make the base wine. Then, in the spring following the harvest, the resulting wines are selected and blended into the base cuvée. Zell Rosé remains on the lees for at least 24 months before being disgorged, revealing a sparkling wine characterised by a soft pink colour, with a dense, fine and persistent perlage. The nose is elegant, fruity, fresh and fragrant, with a slight hint of yeast. In the mouth, however, it combines freshness, elegance and good persistence. Perfect as an aperitif, it can easily accompany an entire meal. Good with fish, it has enough character and structure to stand up to delicate white meat dishes. Try it with a delicate rabbit ragout.
