Produced exclusively with grapes from the Classic zone of Valpolicella, that is the historical one, the vineyards have an average age of more than 20 years and are still bred with Veneto’s traditional method of the pergola. After manual harvesting, the grapes are left to dry in the drying lofts until they reach the right concentration of sugar and only then are they sent for vinification. The refinement takes place as per tradition in large oak barrels for a minimum of 18 months followed by at least another 6 months of stabilization in the bottle. The result of such careful and punctual processing is a great meditation wine.
