Cantina dei Colli Ripani Spumante “Olimpus” Passerina Brut – Country: Italy – Capacity: 0.75 Cantina dei Colli Ripani Passerina is an ancient white grape variety, traditionally grown in the Marche and Abruzzo regions. Particularly appreciated for its fruity aromas and fresh acidity, it is a grape variety that has amply demonstrated its versatility, giving rise to still and sparkling wines of great pleasantness. A fine example is this Spumante Brut Olimpus, proposed by Cantina dei Colli Ripani. Brilliant and refined, this sparkling wine comes from the rigorous selection of grapes that are transformed according to the ‘long’ Charmat method. Processed in an autoclave, in this case the wine remains in contact with the lees for a prolonged period, varying between 6 and 9 months, developing more complex aromas and perfumes. In the glass Olimpus seduces with its straw yellow colour, while the perlage is fine and persistent. On the nose, its bouquet is distinctly fruity, with clear references to yellow fruits such as peach and apricot, enriched by delicate floral notes. Perfect as an aperitif, this Marche Region sparkling wine goes well with fish-based appetisers.
