Al-Cantàra “A Nutturna” Nerello Mascalese IGT in white 2022 – Country: Italy – Capacity: 0.75 Al-Cantàra As proof of the great versatility of Nerello Mascalese, this A nutturna of Al-Cantìra is the son of the noble Etnean vine, vinified in white. Its processing begins with a hand harvest, with the grapes collected in small crates so as not to damage the berries, by a team of experienced local women. Once in the winery, the grapes are destemmed, gently crushed and placed in a closed soft press “inerted” with neutral gas, to extract and separate the must flower. Then, after decanting for about 24 hours, the fermentation phase begins at a controlled temperature. This is then a period of refinement on its fine lees, for 4 – 8 months, in steel tanks. The result is a wine with a great olfactory complexity, with notes that recall spices and ripe fruit. In particular, liquorice, mint and medicinal herbs are recognized. The mineral note, typical of wines from the volcano, is very present.
