Ada Nada “Cichin” Barbaresco DOCG Riserva Rombone 2018 – Country: Italy – Capacity: 0.75 Ada Nada Ada Nada’s Barbaresco DOCG Rombone Riserva Cichin is a wine of great elegance and intensity. It is born on the hills of Treiso, one of the most vocated areas of the Langhe for the cultivation of Nebbiolo. This wine comes from the Rombone sub-zone, famous for its soils of white calcareous marl of marine origin. This soil composition, combined with southern exposure at an altitude between 200 and 350 metres above sea level, create ideal conditions for optimal ripening of the grapes, guaranteeing wines with structure and great longevity. Nebbiolo, the sole protagonist of this Barbaresco Riserva, benefits from these pedoclimatic characteristics, expressing in the glass all the aromatic richness and complexity of the terroir. Cichin best represents the philosophy of the Nada family, which is dedicated with passion and respect to the oenological tradition of the territory. The grapes are harvested by hand towards the end of October, waiting for slight over-ripening to maximise concentration and structure. After an initial selection, the bunches are destemmed and gently crushed, and the must is placed in stainless steel tanks for fermentation. Maceration, at a controlled temperature, lasts about 12-15 days, during which frequent punching-down and pumping-over is carried out to favour the extraction of aromatic components and tannins. Once alcoholic fermentation is complete, the wine undergoes malolactic fermentation and is racked into large oak barrels for a long ageing period of 34-36 months. Bottling takes place without filtration, followed by a further resting period of at least 14-16 months in the bottle before release. In the glass, it has an intense carmine red colour, evolving towards garnet shades with age. On the nose, the bouquet is broad and fascinating, with notes of roses, officinal herbs and fruit under spirits, enriched by spicy hints typical of Nebbiolo. In the mouth, it offers a full and enveloping structure, with abundant but ripe and refined tannins. The finish is long, elegant and dry, leaving a fascinating taste persistence. Thanks to its structure and long ageing, Cichin has excellent ageing potential. It can, in fact, evolve in the bottle for more than 15-20 years, developing more complex and refined nuances.
