Abbazia di Novacella Sauvignon “Praepositus” Alto Adige DOC 2022 – Country: Italy – Capacity: 0.75 Abbazia di Novacella It is impossible not to love this fresh, aromatic white. This is in fact a fabulous Alto Adige Sauvignon. One of the good wines of the Praepositus line from the Novacella Abbey winery. One of those wines that can put a smile on the face of mountain wine lovers. This Sauvignon is made from superbly well-processed grapes harvested when fully ripe and has a beautiful golden yellow colour with greenish highlights. If the aromaticity is typical of the vine, the minerality that emerges clearly from the first sip is largely due to the territory of origin. Above it all, however, there is a clear note of green pepper, the one that every good sommelier always associates with Sauvignon, nettle and grapefruit. Then elderflower and cassis. In the mouth, it is a powerful wine, rightly aromatic, with a savoury aftertaste. For a local pairing, the choice could fall on an intriguing dish of canederli, perhaps served with a chanterelle sauce. For an unusual combination, however, the advice is to try it with a good buffalo mozzarella. Simply delicious.
