Attilio Ghisolfi “Sbardaja” Nebbiolo Langhe DOC 2020 – Country: Italy – Capacity: 0.75 Attilio Ghisolfi Class and spontaneous vivacity are the characteristics that distinguish Nebbiolo. This is rightly claimed by the owners of the Ghisolfi cellar. After all, this is an ancient wine, already known in the cellars of the Royal House of Savoy since the 1600s. The dialect term Sbardajì literally means scattered, scattered. A name that is meant to evoke the origins of the grapes used to produce this red wine, which literally come from vineyards distributed between the Langhe and Roero, in the municipalities of Monforte, Monteu Roero and Priocca. Spontaneous fermentation using indigenous yeasts and great temperature control at every stage of vinification to bring out the best of the freshness and fragrance qualities of the original grapes. This is followed by maturation in small oak barrels for 12 months and a short bottle ageing period before the wine can definitively be considered ready for the shelf. Brilliant ruby red in colour, this Nebbiolo presents a decidedly floral and broad bouquet. Hints of cherry and plum return, combined with liquorice and a hint of spice. In the mouth, it is warm, savoury and velvety, thanks to a moderate tannic charge. To do it justice on the table, it needs to be paired just right. Excellent with first courses with meat sauces, such as classic agnolotti al brasato.
