It is here that Cantine Fina cultivates the Perricone grapes used to produce this Terre Siciliane IGP, a red wine that encapsulates the essence and nobility of this unique land. Perricone, an indigenous red grape variety, finds its ideal terroir in this area. The grapes, cultivated at 250 metres above sea level, benefit from a warm and temperate climate, with temperature excursions that favour aromatic complexity. Harvesting takes place at the end of September, guaranteeing perfectly ripe grapes rich in aromas. Vinified in steel, with six months’ maturation in the bottle, this Perricone is a wine characterised by a beautiful intense ruby red colour, with a complex and intriguing bouquet. The nose clearly perceives spicy notes of juniper and black pepper that blend with hints of morello cherry, jam, plums and cherries, enriched by vegetable touches. In the mouth, however, the wine reveals itself to be elegant and structured, with a solid and soft tannicity, a good alcohol content and a final persistence that enhances its quality. A versatile wine, it pairs well with a wide variety of dishes. Ideal with semi-mature cheeses, sausages, baked pork knuckle, braised meats and roasts.
