In this case, Sauvignon Blanc is expertly processed, providing, at the end of fermentation a rest period of about 4 months on its lees, with frequent btonnage, or stirring, to maximize the contact between lees and wine and increase its volume and complexity. Then, before the final encounter with the bottle, this Sauvignon is matured in oak barrels to intensify the fruity characteristics of the variety. Straw yellow in color with light greenish hues, the nose reveals complexity and elegance, with aromas of lime, grapefruit, pineapple and pear, floral and mineral touches. On the palate it is elegant, with crisp acidity, typical for the varietal, with notes of citrus, tropical fruit and an interesting minerality. Excellent right from the aperitif, this Sauvignon Blanc is certainly not afraid to be brought to the table throughout the meal. Excellent with spicy and mildly spicy dishes.
