Vinchio Vaglio “Le Nocche” Piemonte DOC Grignolino 2023 – Country: Italy – Capacity: 0.75 Vinchio Vaglio Grignolino, a typical red grape variety, is common on the hills of Monferrato, in Piedmont. In all probability its name derives from the dialectal word ‘grignolo’, meaning grape seed, the abundance of which in the berries gives a pleasant bitterish taste to both the grapes and the wine. A very demanding vine, not easy to grow. In the countryside, it requires the right soil composition and layout, while in the cellar it must be treated with white gloves. The final product, however, generally repays all this effort. To discover it in its most traditional version, Vinchio Vaglio offers this label, Le Nocche, whose name refers to a well-known hamlet in the municipality of Vinchio. Vinified in temperature-controlled steel tanks, at the end of alcoholic and malolactic fermentation, the wine is left to age for a few months, again in steel, before bottling. The colour is a clear ruby red, tending towards orange with the passage of time. The nose is richly fruity and vinous, with varietal notes of flowers. In the mouth it is fine, with good freshness and persistence. Dry, savoury and slightly tannic, this Piedmontese red is a true wine for the whole meal. Try it with richly flavoured dishes such as risotto with Castelmagno cheese or, for fans of typical recipes, with Finanziera. True magic.
