Dimonios, the Cannonau di Sardegna DOC Riserva proposed by Sella & Mosca, is no exception. Let’s start with the name. Dimonios takes its name from the anthem of the Brigade Sassari. Founded in 1915, it is the only unit in the Italian army to be composed of members from the region of Sardinia. The Cannonau grapes used in this wine come only from the most suitable vineyards on the island, where the sun shines for many hours a day, guaranteeing the grapes a good dose of sugar. Fermentation and maceration in large Slavonian oak barrels to obtain a wine with a strong and distinctly territorial character. In the glass it has a beautiful deep ruby red colour. The scents recall the Mediterranean scrub and ripe red fruit. In the mouth it is enveloping, spicy and pleasantly alcoholic. A wine that requires a serious pairing, better if regional, such as with suckling pig or grilled meat.
