La Tordera Otreval Prosecco Valdobbiadene DOCG Rive di Guia zero zuccheri – Country: Italy – Capacity: 0.75 La Tordera OTreval Extra Brut “Rive di Guia” is the first “zero sugar” Valdobbiadene DOCG produced by La Tordera. It is made from a selection of Glera and Verdiso grapes from a single vineyard in “Rive di Guia” in the municipality of Valdobbiadene. The “Rive” are vineyards that are particularly suited and indicated on the label for the quality of the grapes obtained there. There are only 43 “Rive” vineyards that represent the qualitative summit of the Valdobbiadene DOCG appellation. The OTreval vineyard, in Guia, is the highest on the estate with its 300 metres above sea level and the area’s characteristic steep terrain. Here the strong temperature range between day and night gives the grapes a unique and unmistakable balance and freshness. Hand harvesting and a good six weeks in autoclave, followed by at least three months of rest, are the key elements in the vinification of this DOCG. Thus is born the wine that contains no sugar at the end of its processing, dry, complex and rich in structure. Pale straw yellow with green reflections, it has a very fine and persistent perlage. On the nose, after an initial floral nuance, it becomes full and fruity while maintaining the natural elegance typical of the grapes from which it comes. In the mouth it reveals good structure and pleasant acidic freshness. Excellent with fish, in particular with the simplest recipes where it has the power to enhance the flavour.
